The two classic truffles are Black winter or Périgord Truffle (Tuber Melanosporum) and the White Truffle or Piemont/Piedmont truffle (Tuber Magnatum). They are very seasonal products, available only from the wild (though experiments in cultivation continue.) The Perigord Truffle is available from December to the end of March, and the White, Piedmont, Truffle from October to December. |
